Crispy Grilled Chicken

What You’ll Need

  • Four boneless, skinless chicken breasts
  • One cup mayo
  • 1 teaspoon dried oregano
  • 1 ½ teaspoons paprika
  • ½ teaspoon cayenne pepper
  • 1 ¼ teaspoons salt
  • ¾ teaspoon ground black pepper
  • ¼ cup chopped parsley (optional)

How to Cook

Turn on your grill and let it heat up. While you’re waiting, whisk together the mayo and spices in a bowl. When the grill is hot, rub the chicken breasts in the mayo mixture—you should use all of it. Grill the chicken until it is nicely charred, about five or six minutes on each side. Garnish with parsley if you wish, and serve!

 

Grilled Honey Mustard Chicken

What You’ll Need

  • Four boneless, skinless chicken breasts
  • ½ cup each of whole grain mustard and honey
  • Juice from half a lemon
  • One garlic clove, smashed and minced
  • ½ teaspoon each paprika and salt
  • ¼ teaspoon each cayenne pepper and red pepper flakes

How to Cook

Whisk all the ingredients in a small bowl and set aside four tablespoons. Pour the rest of the mixture over the chicken. Toss the chicken completely coated with the mixture, then cover it and let it sit at room temperature for 30 to 45 minutes. When you’re ready to cook, turn on the grill to medium-high. Grill the chicken for 6 or 7 minutes on each side or until it is cooked through. Pour the honey mustard mixture you set aside over the chicken and let it rest (covered, so it says warm) for about five minutes before serving.
